Ingredients:
3 eggs
2 cups sugar
2 teaspoons vanilla
1/2 cup canola oil
1/2 cup applesauce
2 cups zucchini squash, shredded with skin on
1/2 cup peanut butter
3 teaspoons cinnamon
3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup walnuts (optional)
Instructions
Preheat the oven to 325º. In a large bowl combine the eggs, sugar, vanilla, canola oil, applesauce, zucchini and peanut butter. Mix until smooth. In a medium bowl combine the cinnamon, flour, baking powder and baking soda. Gradually add the dry mixture to the zucchini mixture. Stir to combine. Add walnuts if using. Stir. Pour batter into 2 rectangular loaf pans. Bake for one hour or until done. Makes 20 servings.
